Bill Downie crafts thoughtful, site-reflective wines from his farm in Gippsland, with his immense dedication to his craft overshadowed only by his affable and unassuming nature. Widely seen as one of the most influential producers of Pinot Noir in Australia, Bill is credited with helping shift cultural attitudes toward more vibrant and pure examples of the variety. The 2020 Bull Swamp Single Vineyard Pinot Noir shows a little more weight and extraction than Bill's other cuvées, with smokey reduction that reveals a more brooding palate of blood plum, rhubarb, violet flowers, and allspice. There are some firm tannins pushing this cuvée into a more serious style of Pinot Noir, though not without Bill's trademark freshness and purity.

William Downie Bull Swamp Single Vineyard Pinot Noir 2020

The 2020 Gippsland Pinot Noir is lifted and perfumed, with red cherry, pomegranate, cinnamon, and green peppercorn spice accentuated by fresh, early-picked acidity and grippy tannins.

William Downie Gippsland Pinot Noir 2020

This is a rather complex Grüner, to which the team at BK claim could be a light red if you tasted it blindfolded. 50% whole-bunch, 50% aged in neutral oak, and transferred to egg-shaped concrete vessels after primary fermentation for nine months. Musk stick, subtle rosewater, and crunchy green pear, with a lovely textural richness and a little herbal bitterness on the finish.

BK Wines Ovum Gruner Veltliner 2020

Based in Burgundy's famed village of Volnay, Marquis d'Angerville produces a gorgeous array of wines with immense attention to detail both in the vineyard and winery. The 2017 Bourgogne Rouge is delicate and refined, with blackberry bush, redcurrant and subtle earth followed by a little new oak spice and firm, youthful tannins. This will age magnificently, but is an absolute pleasure to drink now!

Made in a classic Rhône style, this Syrah is awash with black fruits, leather, and peppery spice alongside some cured meat savouriness and a lick of grainy tannin.

This is a superlative vintage of Deep Woods' prolific Cabernet Sauvignon, with head winemaker Julian Langworthy declaring it their best to date. Roasted cacao, bay leaf, and cassis are bountiful on the nose, with a medium-weight palate showing blood plum, mulberry, and dried tobacco held together by beautifully supple tannins.

This is a delicious and fantastic value Sangiovese from Emilia-Romagna, one of Italy's great culinary regions. Owned and made by Fattoria di Felsina in Tuscany, this Sangiovese is made from biodynamically farmed vines and matured in stainless steel to preserve the vibrancy of the fruit. Dusty dark cherry, plum, and tobacco spice with present but very approachable tannins. Pair with a bowl of Bolognese for guaranteed good times.

We all love a good Negroni, but Four Pillars love it so much that they made a gin especially for the cause! Using Tasmanian pepperberry leaf, cinnamon, West African spice grains of paradise and Indonesian cubeb, this is a spicy and incredibly aromatic gin which will cut through and complement your Campari and vermouth beautifully. (700ml) 43.8% ABV

Four Pillars Negroni Gin 700ml

This cider is made from a blend of Pink Lady, and Granny Smith apples which are milled and gently basket pressed. Fermentation was conducted by cultured Champagne yeast strains. Post fermentation the different cider cuvees were blended, filtered and bottled. Slightly sharp taste with gentle fruity notes and a lingering, creamy finish. Mouth-watering. Real Apple flavour. (500ml) 7.0% ABV

Harcourt Dry Apple Cider 500ml (Black Label)

Jean-Marie Fourrier took the reins of his father's Domaine in the mid-1990s, carrying on the tradition of meticulous and painstaking vineyard management. Careful attention is put into producing pristine and perfect fruit, which, when placed into barrel essentially makes itself. The 2017 Gevrey-Chambertin Cherbaudes Premier Cru has a charming immediacy to it, with a compellingly floral nose of violet flowers and subtle vanilla that set the stage for opulent blue fruits, blood orange, and gentle earthiness with ferrous and mineral-like tannins. It will age beautifully over the next decade, but is drinking fantastically at present should you choose to delve in now.
