This is a delicious and youthful Mezcal, made from eight-year-old agave Espadín which is cooked using an underground oven fuelled by wood from local trees. It's then fermented for 7-30 days (depending on temperature and time of year) and double distilled in a small copper still. It's fruity and grassy, with notes of peach, freshly mowed lawn, and subtle woodsmoke. Grab it for your home bar, because it's fantastic for cocktails!
