Though originally from the Jura region, it took Nicolas Jacob a while for his passion for wine to materialise. As if making up for lost time, Nicolas sought out the very best mentors of the region, and was soon under the tutelage of both Laurent Macle (of Domaine Macle) and Jean-François Ganevat - the former eventually taking him on as his right-hand man. After purchasing a small plot of land in 2015, Nicolas became a fully-fledged producer four years later when he purchased a small winery along with an additional five hectares of vineyards. The L'Etoile La Haut Chardonnay comes from the first plot Nicolas purchased, with the vines for this cuvée having been planted in 1953. Prior to fermentation with indigenous yeasts, it was transferred to old demi-muids and matured for 18 months - periodically topped up to prevent oxidation. Lemon pith, white flowers, crushed gravel minerals, and subtle woodsmoke with taut acidity giving it beautiful length and bountiful energy.
