Based in Copenhagen, Empirical Spirits were born out of a desire to push the limits of distilled beverages. By tinkering with each individual process involved in distillation, from malting to yeast selection, they have created a range of products that the word 'unique' does little to describe. The Ayuuk is inspired by the Pasilla Mixe chili from Oaxaca (known as ‘Ayuuk’ in the Mixe’s native language’). Here, the chilis are macerated in low wine, distilled, blended with spent Pasilla Mixe kombucha, and finished in Oloroso casks. The Ayuuk is full of dark red fruit, smoky, and earthy.
